1. Sarson ka Saag (Mustard leaf green)
Ingredients
- Sarson’s leaf (Mustard leaf) 500 gm
- Bathua 200 gm
- Garlic 50 gm
- Ginger 5 inch
- Onion 2
- Green chilies 3 (As per requirement)
- Garam Masala ¾ tablespoon
- Red Chili Powder ½ tablespoon
- Coriander powder ½ tablespoon
- Salt As per requirement
- Oil 10-20 ml
How to Prepare
- Wash vegetable leaves with fresh and clean water. After washing steam the leaves along with a little amount of salt and 3-4 tablespoons of water.
- Once vegetable leaves get softer in steamer or pressure cooker. Turn off the gas fire and leave it for cooling.
- You can use a masher to mash green puree to make it a soft and smooth paste.
- Chop the onions very tiny and make a paste of garlic, ginger, and green chilies.
- Heat a medium-deep bottom pan, and apply oil to it.
- Add chopped onion, ginger, garlic, green chili paste. Fry all the ingredients on low heat until they get light brown.
- You can cover the pan for 1 minute to create steam to cook. This process takes less amount of oil for cooking.
- After the onion gets transparent add coriander powder, red chili powder, garam masala, and salt.
- Once spices are ready add the green puree to it. Turn heat to full and apply a little amount of water if needed.
- Boil the recipe for a couple of minutes. Once flavor gets mixed. Turn off gas fire and taste it. Adjust salt quantity as per the taste. It is most popular Indian vegan recipes.
- Transfer Sarson ka saag to the serving bowl and enjoy the meal with chapatti.
2. Baingan Bharta
Ingredients
- Large Baingan (Eggplant) 2
- Oil for cook
- Cumin Seed ¼ tsp
- Onion 3 medium (chopped)
- Ginger-Garlic Paste 1 tsp
- Green Chilies 3 (chopped)
- Tomatoes 1 big (Chopped)
- Turmeric Powder 1/2 tsp
- Coriander Powder ½ tsp
- Garam Masala ½ tsp
- Red chili powder ½ tsp
- Salt as per requirement
- Coriander leaves ½ small bowl (chopped)
How to Prepare
- For the baingan bharta first grease row baingan with oil. Roast it on open flame until it gets squashy inside.
- Peel the eggplant’s roasted skin and clean it. After that puree the baingan with the help of a masher.
- Heat the oil and fry the cumin seed in it.
- Fry chopped onion and tomato. Add green chilies, ginger-garlic paste, and salt. Cook it at low flame.
- Add grilled mashed baingan and cook for 2-3 minutes at medium flame.
- Add all spices and mix it well. Cook it at medium flame for 3-4 minutes.
- Once the spices’ flavor mixes well with the bharta. Turn off the flame.
- Transfer baingan bharta in a serving bowl and enjoy the meal.
3. Easy Aloo Gobhi Sabji
Ingredients
- Cauliflower 300 gm
- Potato 4 (medium size)
- tomatoes 2 (small size)
- Onions 2 (medium size)
- Cumin Seed ½ tsp.
- Coriander leaves ½ cup (chopped)
- Ginger garlic paste 1 tsp.
- Garam masala 1 tsp.
- Red chili powder 1 tsp.
- Coriander Powder ½
- Turmeric powder 3/4 tsp
- Salt As per requirement
How to Prepare
- For preparing Aloo gobhi sabzi, wash and cut cauliflower in medium size. And also cut potatoes in dice.
- Heat oil in a medium-deep pan, and apply cumin seed.
- Add chopped onion and fry it, until it gets light brown. After this add chopped tomato cooks it at the medium-low flame.
- Once the mixer cooks well, apply ginger garlic paste and stir for 2-3 minutes.
- Combine Garam Masala, coriander powder, Red Chilli powder, turmeric powder, and salt in a mixing bowl. Cook for 2 minutes over medium heat, stirring constantly.
- After spices are cooked medium. Add cauliflower and potato and mix vegetables with spices.
- Apply a little amount of water, and cover the pan. Cook vegetable at medium flame for 4-5 minutes.
- Once spices’ flavor mixes well with vegetables. And all ingredients cooked well in the heat. Turn off the heat.
- Garnish vegetables with coriander leaves. Serve the recipe in a serving bowl.
4. Mushroom Masala
Ingredients
- Button Mushroom 200 gm
- Chopped Onion 1 cup
- Chopped Tomato ½ cup
- Ginger garlic paste 1 tsp
- Cumin seed ½ tsp
- Cinnamon 2
- Cardamom 1
- Red chili powder ½ tsp
- Coriander powder ½ tsp
- Turmeric powder ½ tsp
- Garam masala ½ tsp
- Salt As per requirement
- Water As per requirement
- Coriander leaves for garnishing
How to Prepare
- Heat oil in a pan. Add cumin seed, cinnamon along cardamom.
- After they cooked. Add chopped onions and fry them at medium heat until they get translucent.
- Fry for neo minute with the ginger-garlic paste.
- Add coriander powder, red chili powder, turmeric powder, and garam masala along with salt. Fry it for 2-3 minutes.
- Add chopped tomato and mix it well. Cook until slushy.
- Cover the pan for 3-4 minutes and cook the gravy at medium flame.
- Add a half-cut button mushroom to it and mix it well. Add salt if needed.
- Cover again for 4-5 minutes. The mushroom will release enough water to cook. If extra water is required, add some as per requirement. Cook for 3-4 minutes.
- Add some coriander leaves for garnishing. Cook for 30 sec. to 1 minute. Turn off the heat.
- If you want to add cream to it, then you should try cashew cream.
- Serve it hot with chapatti. Enjoy its delicious taste.
