  • Chopped almond 1/4 cup
  • Coconut powder 5 Cup

How to Make

  • Mix coconut flour, powder sugar, and oat flour with chopped almonds and 3/4 cup coconut powder in a bowl.
  • Apply full-fat coconut milk vanilla extract and rum extract.
  • Start making dough of ingredients with no lumps.
  • Once the dough is ready, fridge it for 1.5-2 hr.
  • Make small or medium balls of dough as per your choice and roll it in coconut powder.

Ingredients

  • Cocoa Powder 1/4 cup
  • Almond Powder 1 cup
  • Oat flour 1/2 cup
  • Salt 1/5 tsp
  • Powder sugar as per taste
  • Vegan butter 6 tsp(melted)
  • Coconut milk full fat 370 ml
  • Corn starch 1/3 cup
  • Peppermint Ex. 2-3 tsp
  • Whipped coconut vegan cream

How to Make

  • Before starting, make sure to chill the coconut milk overnight.
  • For the crust of the pie, preheat the oven approx 345 degrees.
  • Put almond, oat, cocoa powder, and sugar in a bowl and mix it well.
  • Add salt to it and stir the mixer. Pour it into the pie pan and press evenly bottom and side of pan.
  • Baked it in the oven for at least 20-25 minutes. Check your crust for a complete bake.
  • Place crust for the cool down. And prepare the filling part.
  • Add corn starch with coconut milk and whisk until it has no lump.
  • Mix coconut milk with sugar and stir until it gets thick. Mix in the peppermint extract thoroughly.
  • Take custard in the bowl to cool down. Make sure custard does not make a solid layer on top. Once custard cools down refrigerate it for a minimum of 2 hours.
  • Once the custard is chilled completely mix it with 1/3 of coconut whipped cream.
  • Spared it on the crust evenly and put it in the fridge for chill.

  • Almond 2 cup
  • Dates 7-10
  • Cinnamon powder 3 tsp
  • Salt 1/4 tsp
  • Cashew paste
  • 240 gm
  • Chilled full fat coconut milk 370 ml
  • Edible coconut oil 1/3 cup
  • Powder sugar as per taste
  • Cardamom powder 2 tsp
  • Ginger powder 2 tsp
  • Clove 3-4
  • Dry fruits 1/3 cup
  • Berries 1/5 cup

How to Make

  • Add almond, 1.5 tsp cinnamon, and salt together and grind it well in the grinder.
  • Once it mixes well. Cut dates into small pieces add the mixer, grind again.
  • Blend the mixer until it gets the thick and sticky dough.
  • Place baking paper on the cake pan. Press the dough over baking paper. After that, put it in the fridge to cool off.
  • Now prepare for filling part of gingerbread cake, Add cashew paste and coconut cream in, clean and dry, blender and process it.
  • Add coconut oil to a small pan on low heat. Mix spices in it and fry. Once it leaves essence mix it with filling after it gets chilled.
  • Spread filling on the crust and put it in the freezer for 4-6 hours until filling sets.
  • After all set, you can garnish the cake with dry fruits, berries, and melted chocolate or chocolate flakes.
  • Enjoy the dessert on Christmas Eve. You can store it in the freezer for a couple of days.
